The packaging of fresh pasta guarantees the freshness and integrity of the product.
Upon opening the package, the pasta must have the same sensory properties present before processing: aroma, taste, consistency and colour.
The technology that ensures this performance is packaging in a modified atmosphere that increases the shelf-life and guaratees the properties of fresh pasta even several days after packaging.

Nitrogen N2 – carbon dioxide CO2 – in exactly dosed quantities to conserve the freshness of the product as if just packaged. PACKAGING PERFORMANCE
- Barrier against moisture to avoid weight loss and partial dessication of the product.
- Barrier against air to preserve the composition of the modified atmosphere.
- Barrier against aromas to maintain the fragrance and taste as just packaged.
- Heat resistance: while making the thermal treatment to the packed pasta it is necessary to use high thermal resistance packaging films.
